Turkey-Veggie Meatloaf Balls



This is a kind of meatloaf that tastes amazing. And it is very nutritious.

Ingredients:

  • 2 cups finely chopped zucchini
  • 1 cups finely chopped red onions
  • 1 red bell pepper, finely chopped
  • ½ cup finely chopped parsley
  • 1 cup finely chopped mozzarella cheese
  • 1 pound ground turkey
  • ½ cup cooked quinoa (or raw fine bulgur)
  • 1 egg
  • 2 tablespoon mustard
  • 2 tablespoon olive oil
  • 1 tablespoon barbecue sauce
  • 1 teaspoon turmeric
  • Salt and pepper (salt amount depends on how salty cheese is)

Directions:

  • Preheat oven to 400 degrees F (200 C). Spray about 25 muffin cups with cooking spray.
  • Mix all ingredients
  • Fill each prepared muffin cup about ¾ full
  • Top each cup with about teaspoon of barbecue sauce
  • Bake in the preheated oven about 25-30 min
  • Let stand 10 minutes before serving
